80% of the rice we use is the local rice. We gradually increase the ratio of local rice and aim to use only local rice, and produce the world-standard Sake.
We use underground water called ``Tatsumi``, which is popular as the high-quality water. It's our general drinking water too.

It's quite essential to minimize the stress of heat against Sake to create the crystal clear texture.
