ONO SHUZO

Ono Shuzo was established in 1864, when was the time of Meiji Restoration. Yoakemae, the main brand of Ono Shuzo, is named by the title of the famous book written by Toson Shimazaki.

Darkest before the dawn..

It’s a book describing the disturbance from the Edo era to the Meiji Restoration. The name was officially authorized by the writer’s family.

They got the words from Toson’s family. “Please promise to pursue the genuine and provide the real Sake.”

The spirit never dies.

COMMITMENT

Ono, Nagano is blessed by the rich nature. It looks nice, but having a life here is very severe, especially in winter.
Only the people who accept the environment can utilize the great natural resources, like high-grade brewer’s rice like Miyamanishiki, the crystal clear water from Mont-Kiritoh.
We appreciate nature and create the Sake that makes people impress.

RICE

Most of the rice we use is AAA Yamadanishiki, or local premium rice grown by contracted farmers.
We only produce premium Sake by using premium ingredients.

WATER

We use underground water from the well in the brewery.

SKILL

We brewers need to feel the vibes of nature, learn the cycle. Then, we can brew Sake naturally. To make this happen, we get things done. It means it's a never-ending challenge.

MILD
