The Ibaraki local brewery rice
Hitachinishiki is the first brewery rice bred in Ibaraki. The main brewery rice planting in Ibaraki is Miyamanishiki, but easy to fall in this area. The Ibaraki sake brewery association asked a new strain of brewery rice for local sake brewery.
Hitachinishiki was bred from 1991 and complete in 1998.


Although Hitachinishiki is tall but strong and hard to fall. It also got the brewery rice characters like large particles, low protein content, and easy to find Shimpaku inside.
The sake produce by Hitachinishiki got the clean texture and delicate aroma.
