Saganohana is one of local brewery rice of Saga. It was breed by two famouse brewery rice, Yamadanishiki and Wakamizu.
Saganohana is suitable for producing Junmai with the strong mouthfeel, rich sweetness, and umami flavor. Some sake breweries try to polish Saganohana below 60% for brewing Tokubetsu Junmai or Junmai Ginjo in these years.
By the way, “Saganohana” means “the flower of Saga”.
