Sakanishiki is Shimane local brewery rice. It was starting breeding by Shimane Agricultural Technology Center from 1985 and complete in 2004.
The Sakanishiki was breeding by dreamy brewery rice “Hattannagare” and “Kinmonnishiki”, and “Hattannagare” also have the gene from “Omachi”. That’s why sake breweries expect Sakanishiki will produce fine sake.


The Sakanishiki is an early line and the rice particle is larger then Gohyakumangoku. It got the character with low protein content and smaller Shimpaku, not easy to broke at high polished rate. Sakanishiki is suitable for producing premium sake.
The name of Sakanishiki because of the temple for the god of sake “Sakajinja (佐香神社)” locate in Shimane.
