The high-temperature quickly enables the saccharification and shorten the long Yamahai process.
- Mix Koji rice, steamed rice, and water
- Heat it around 55℃ to quickly proceeding the saccharification
- Chill it down to 25℃
- Put yeasts and lactic acid bacteria
