The component for Japanese sake about 80% is water, it’s mean water is the most important material. Water not only affect the texture of sake, also affect the quality of brewery rice.

Most sake brewery choice soft water for sake brewing. Some sake breweries use hard water because of the location, and the strong and rich flavor sill catch the eyes of sake lover.
