Just like an apple

Yeast No.77 is one of the different yeasts which is generally distributed. This yeast produces many acids, especially the malic acid accounts for 60-70% of all the acids. Just one sip makes you recognize the difference.

How to keep the identity of Sake

Generally, white wine contains lots of malic acids. Most of Sake brewed with this yeast has very high acidity like over 3.0.
The identity of Sake is Umami and natural sweetness. The high acidity easily breaks the balance of Sake’s characteristic. So, brewing Sake with this yeast is obviously challenging matter.

How to enjoy

The best is chilled well and drink with the white wine glass. The taste tends to be sharp and light-bodied so that it’s not good for the hot sake and using general Sake cup.
