Pairing Grilled Tuna with Black Pepper with AZUMATSURU ORIGARAMI


Azumatsuru Origarami is a sake which has the attractive aroma and taste like apples. Peppers stand the apple flavor out, and give additional umami flavour to the tuna. The after taste becomes fresher and crisper.


Tuna sashimi 200g
Black Pepper 2 tbsp
Garlic 1 piece
Japanese Radish 200g
Cucumber 1/2
Olive oil 2 tbsp

Soy sauce 2 tbsp
Sugar 1/2 tbsp
Lemon Juice 2 tbsp

How to cook

1. Grind pepper
2. Grate Japanese radish and cucumber
3. Mix lemon juice, soy sauce and sugar for the sauce
4. Cover tuna with ground pepper
5. Fry garlic with olive oil
6. Singe tuna
7. Warp with the foil and let it sit 4 mins
