In these days, tempoichi is improving the quality of sake dramatically. Their challenge mostly goes right direction.
This label is also one of the improved label in comparison with last year. The type of yeast has been changed and the amount of shubo has been doubled.

Aroma is fresh and subtly fruity like citrus. The attack is smooth but little sparkling. This vibrant texture attracts sake lovers to sake nouveau. Since taste is light and gently sweet, it's very easy to drink.

When the gentle sweetness fades out from your tongue, sharp sourness shows up and washes your mouth and throat cleanly.

1. Without "Ori"(melted rice)
2. With "Ori"(melted rice)

With Ori, you will enjoy richer and sweeter taste.

RICE

The brewery rice "Hattannishiki" represents the breweing of Hiroshima, which has very rich taste. Working very closely with the local farmers and produce less agrochemical brewery rice.

WATER

Using the aciant water flowing 200m underground. The taste is super soft and light.

SKILL

Stick to carefully processing the raw materials. When they wash the rice, devide huge amount of rice to small amount and wash carefully. Also they don't manage to add a lot of human hands in process. They are trying to let nature brew sake.

MIND

There are only 6 brewers. All of them get together and talk closely and try to improve the quality of sake. They are proud of what they are brewing.
