This is exactly a sake whose taste is almost same as the one you can drink in brewery during brewery season. Usually, sake is rested in the barrel to stabilize the taste for a while, however, this sake is bottled right after pressing directly from sake cask.

Right after opening the bottle, sweet aroma like banana spread, which is just like an aroma comes from Moromi tank.

The liquid contains melted rice a little and its color is little misty. Attack is strong and little sparkling. You can feel the power of organic rice. The taste is rich and juicy but not too sweet. Fruity sourness like citrus comes in the end.

RICE

Only use rice produced in Aomori prefecture. Moreover, we own the rice field and grow by ourselves. Mainly brew sake with local brand "Hanafubuki", "Hanaomoi" and some regular rice like "Masshigura", "Reimei" for challenging to create brand-new taste.

WATER

Use super pure underground water sprung from the limestone aquifer. This water is branded as "蟹沢(Ganja) water" and well-known in Aomori prefecture. The nature of water is middle hard.

SKILL

Have been Inheriting Nanbu brewing style for more than 240 years. On top of this traditional foundation, we built the data driven brewing method. With testing and monitoring various kind of traditional skill, we are trying to reproduce the success cases.
