Yukimegami means "snow goddess", which is the latest brewery rice given birth in 2015 in Yamagata. The aim is to produce the high-grade ginjo which has cleaner and smoother taste.
The first note is a gently fruity, like a banana. Texture is soft and comfortable. With regard to its taste, very mild sweetness, which gradually thrills through the mouth, is particular and impressive.
Towards to the finish, gentle sourness like apple shows up and makes the aftertaste clean.
This label is the tender-hearted Junmaidaiginjo distinguished from the typical daiginjo with a full aroma and fresh taste. It's even possible to enjoy with hot sake.

RICE

Mostly use brewery rice made in Yamagata, where is famous for various high-quality rice. With having appreciation for farmers, we produce high-quality sake.

WATER

We mainly use the hard water from own well that underground water of Mount Gassan flows in. Beside with that, we recently started to use the soft water from the near spring.

SKILL

Wooden cauldron for the steamed rice, wooden tool(Kojibuta) for producing Koji and Wooden sake pressure(Kibune) for squeezing sake, We craft sake with using wooden traditional tools.

MIND

Brewers have to understand the characteristics of own brewery and plan the ideal sake based on it. It's a great moment to have the taste of sake the ideal one as planned, but sometimes the sake can be far better than our plan. Brewing carefully is certain, but feeling the invisible power is also one of the best part of brewing.
