Junmai Daiginjo Type
Charmed by the fresh-sweetness like a young banana, fell in love with the creaminess and milkiness at room temperature

The first impression of top note is like a young banana which is fresh and sweet. The surface of texture is silky smooth and its inside is thick and dense like the starch syrup.

Firstly, rich umami influenced by the local brewery rice "Yumesansui 夢山水" shows up and the sweetness is well controlled.

As the temperature rises toward to the room temperature, the fresh-sourness like lactic acid is coming up and gradually shifting to creamy and milky taste; the change of the taste is very exciting. This is an elegant Junmai Daiginjo that has well-balanced 5 tastes.

RICE

They used to use the rice grows in Northeast Japan. However, they have drastically shifted all brewery rice to local one only in early 2003. They believe the shortcut to be the only one is local brewers living there brew local rice. They are proud of the local rice brand "Yumesansui" which makes sake's aroma very clean.

Sangane Mountain is the treasure box of high-quality water. They only use the underground water comes from that mountain, which is very soft and clean.
