It’s very wasteful to lose such a great production place of rice, so young and visionary Abe Shuzo started to cooperate with the farmers in this area, and produce the Kimoto Sake. To bring the high potential of rice, they only polish by 8%.
It’s a powerful Sake; you can feel the greatness of soil. The taste is complex like brandy, chocolate, and ripe apples. However, the clear sourness cleans your mouth and makes its finish very light. There is a huge potential for pairing.
