It’s a specially brewed unpasteurized Sake brewed by using the white Koji.
The sweet and refreshing sourness is very cute and pop. The SMV looks high, but the same high acidity makes the brilliant balance, and the finish is very crisp.
We recommend drinking chilled and pair with a fish appetizer like Carpaccio.
Olive oil connects Sake and fish.
