翁 下原 Okina Shimohara is the legendary brewmaster, Shimohara Tazue, who built the foundation of Daishinshu brewery.
He started his career as a brewer at his 16 y/o and retired at 91 y/o. He has an extraordinary skill that tells how the Sake is brewed by just one sip.
He passed away in 2008, and the policy and passion have been led to the current brewers.
It’s the ceremonial Sake to show respect to the godfather of Daishinshu brewery and only produced 300 bottles.
The highest grade of fantom brewer’s rice of Nagano, Kinmonnishiki, polished down to 49%, is used for this Sake.
