It’s produced with the local Gohyakumangoku by using the Yamagata’s local yeast. It’s matured for around six months at very low temperature with the unfiltered and undiluted condition.
The fruity top note is like a green apple and pear, and the attack is light and still fresh. Like steamed rice, the savory Umami gradually spread, which is the great point of Autumn limited Sake.
What’s special is the dry and clean finish influenced by Gohyakumangoku. The balance of taste is special!!
