It’s brewed by using Suisei, the brewer’s rice made in Hokkaido, and the latest local yeast of Yamagata “YK009”. The rice contains less protein and fat, so the taste tends to be light and clean.
YK009 creates less acidic taste and elegantly fruity aroma.
This recipe makes the elegantly fruity and light Junmaidaiginjo.
