It’s an unpasteurized Junmai Daiginjo produced by Dewasansan polished down to 47%; this rice is suitable for high-grade Sake brewing, and it was carefully cultivated in a land with a large temperature difference peculiar to the basin.
The scent of gorgeous yellow apple-like fruits, lilac, Mochi dumplings, and minerals are harmonized, and the gentle sweetness spreads a long-lasting soft impression. Well-balanced acidic levels with a lingering elegance.
