The aroma is slightly sweet like melons. The first mouthfeel is refreshing, and the juicy sweetness flavor is following. SMV -13 makes you consider it’s a very sweet sake, but it’s surprisingly good balance. The very polished rice and the sourness popping up from the grain of sweetness makes its texture clean and transparent.
This is the quite unique Junmaidaiginjo which you can see the future of traditional “Sticky rice 4 steps Moromi production method”, which a few breweries can do now.
