In 2003, they finally developed the original brewer’s rice, Hakutsurunishiki, to surpass the king of brewer’s rice Yamadanishiki. It’s fruity and juicy Junmaidaignjo with rich Umami. The texture is powdery and very transparent. The sweetness is sophisticated, like Japanese Sanon sugar.
