This label is a collaborative product between Hokusetsu and NOBU. It’s produced by using the signature brewer’s rice of Niigata, Gohyakumagoku, polished down to 45%.
By fermenting slowly and carefully at a low temperature over a long time, The Umami of rice is brought out thoroughly. It’s a delicate and fruity Sake.
