It’s the most premium Daiginjo of Hokusetsu. The rice is the grand cru Yamadanishiki grown in Hyogo Pref, polished down to 35%.
Moreover, what makes this label very premium is the method of a squeeze. A high-speed centrifugation machine is used to squeeze this Sake.
This method minimizes the stress to Sake while squeezing, and the flavor and taste of Sake become softer and more elegant.
There are totally no off-flavor. It’s very transparent but filled with the condensed cluster of Umami. The aroma is extremely elegant and fruity. The after flavor lasts long and leaves the subtle but beautiful sweetness in your mouth.
