CEL-24 is the name of yeast invented in Kochi Prefecture, and it’s a unique yeast producing the Sake almost like a fresh-squeezed fruit juice.

There is a Junmaiginjo version for CEL-24, and the difference is the brewing process, Junmaidaiginjo is more carefully brewed and pasteurized once.

It’s a fruity and sweet type of Sake, but more elegant and moderate. If you prefer dry type Sake but appreciate how special CEL-24 is, we recommend the Junmaidsaiginjo.
