he young genius challenges the new rice from Yamagata, Dewasansan. Yamagata prefecture is well-known as the Ginjo Sake region, which means the light and fragrant Sake.
Dewasansan is usually used for brewing high-grade Sake, and makes a very beautiful aroma.
The greatest skill of the genius brewmaster is magical transparency. He has the talent to extract the rice’s crispness and dryness and make an excellent balance of taste.
And, you don’t taste any off-taste, and the moderately sweet aftertaste lasts long.
It’s a good Junmaidaiginjo for Japanese cuisine pairing.
