Kujira is the brand of Chiyo Shuzo, which focuses on the “terroir”. Kujira is produced with the Yamadanishiki grown beside the brewery by the brewer’s hands.
This label is the new challenge, low alcohol, polish rate of 80%. Both two challenges are all new for Shinomine.
The aroma is moderate and refreshing, like mint and young fruits. The texture is light and fizzy. You can feel the vibrancy of unpasteurized Sake.
The yeast no.11 makes the sharpness and elegant dryness. As same as other KUJIRA, there are several layers of taste. It should encourage you to pair which kind of food!!
