It’s brewed with the local brewer’s rice, Suisei, grown in Niseko. And, Niseko Shuzo brews Sake with using the underground water flowing down from Niseko Wise Mountain.
It’s the Tokubetsujunmai, but the polish rate is 60%, and two yeasts are blended to create a unique flavor.
The top note is gently fruity, and the fruity aroma like melons goes through the nose as holding it in your mouth. The attack is very smooth, and the first impression is light-bodied Sake. As you sip it, the juicy Umami and sweetness spread more and more.
The finish is dry and clean. It’s well-balanced Sake!
