Dry Sake produced unusually with the Yamahai method, bright but complex taste
Yamahai + Nama + Genshu + Muroka + Jikagumi + Super dry = Irreplaceable. It’s tough to describe because there are so many factors. The aroma is refreshing, and Jikagumi makes its texture fizzy.
The SMV marks +18, which is considered “super dry”. It’s sharp, but the Yamahai method makes a lot of Umami.
Because of the complex taste, it’s not too dry to the SMV. Yamahai is the specialty of OKURA HONKE, so their skill and knowledge create such a special Sake.
