As soon as brewers put sake bags in the Sake cask, the first part of Sake is come out by its weight. This very natural Sake is called Arabashiri. This Sake is aged only Arabashiri for two years in low-temp.
The aroma is refreshing like the mix of mint and citrus fruits. The attack is very juicy but soft and light at the same time. The sophisticated and most Umami spreads instantly.
In the last half, the sourness like the citrus fruits shows its face and promotes the transition of taste. The off-taste is ultimately excluded and remaining slight off-flavor is turned to be Umami by the aging so that the taste is surprisingly bright. This label represents the Umami type Sake.
