The top note is sweet like Koji rice and ripe melon. As you hold it your mouth, the refreshing Umami spreads slowly. The after flavor lasts very long and it’s sweet but spotless like the clear lake.
It’s a completely fermented type of Sake, so it’s very dry and light-bodied because most of the glucose is used for the fermentation.
The SMV is lower than other dry Sake, but you can understand the difference.
