SENKIN NATURE is the new face of SENKIN, which is produced by the method 300 years ago.
It’s a very risky and time-consuming way. But, the taste of Sake is totally different to the other Sake brewed with the popular method.
And, this Sake is Kijoshu “貴醸酒” meaning “Preciously brewed Sake”. The reason is the Sake put in the fermentation process instead of water. That’s why it’s named “貴醸酒” and it’s more expensive than general Sake.
So, this Sake is brewed by using SENKIN NATURE instead of water. When we heard the concept, we couldn’t believe it and thought it’s crazy.
The aroma is filled with a condensed but fresh aromas like mango, honey, and passionfruits. The texture is condensed and so smooth, the perfectly harmonized sweetness and Umami spread sublimely.
The rich sourness creates the outline of taste, and the finish is sharp and clean, like Gyokuro green tea.
