Through the challenge for two years, Senkin Nature became the one and only Sake. They revived the method of 400 years ago, organic rice, wooden barrel, no yeast nor lactic acid additive, and it takes three times longer time than the standard method.
The aroma is rich and fruity like muscat and grapefruits. The taste is layered and filled with elegant sweetness and Umami. In the end, slightly bitter woody flavor leaves.
