It’s produced with the local Yamadanishki polished down to 55%. The design of Sake has been changed, and it’s a very challenging trial.
Usually, artificial lactic acid is added in the fermentation process to protect Sake yeast. Shinomine seeks the natural and original Sake, so they tried to protect the Sake yeast by using the white koji yeast, which produces a lot of acids than the usual yellow koji yeast.
This natural acid protects the Sake yeast and helps them to proceed with the fermentation without unnecessary stress.
The challenge succeeded very much!! It’s a crisp and refreshing Sake, but there is roundish and mild Umami in the depth of the taste.
