It’s produced with Omachi rice polished down to 50%. By being aged carefully at -5 degrees for the first two years and at 10 degrees for the third year, the taste becomes roundish, and the texture achieves mellowness.
There still are some freshness and sharpness, and transparency. The aroma is exotic akin to dried fruits, especially raisins.
It’s great to appreciate both chilled to warm temperatures.
