In these days, tempoichi is improving the quality of sake dramatically. Their challenge mostly goes right direction.
This label is also one of the improved label in comparison with last year. The type of yeast has been changed and the amount of shubo has been doubled.
Aroma is fresh and subtly fruity like citrus. The attack is smooth but little sparkling. This vibrant texture attracts sake lovers to sake nouveau. Since taste is light and gently sweet, it’s very easy to drink.
When the gentle sweetness fades out from your tongue, sharp sourness shows up and washes your mouth and throat cleanly.
