Kinmonnishiki is called the fantom rice in Nagano Pref. It used to be the popular brewer’s rice in Nagano, but most of the farmers stopped to grow the rice due to its hard-to-grow characteristic.
It’s also very troublesome rice to proceed with the fermentation, so the well-experienced brewers only can bring the great points out.
The complex but transparent taste is the attractiveness of this rice. This Sake has a moderately fruity aroma like apple, and the finish is very sharp.
This elegant Sake nicely pairs with clams.
