Ginnosei is the popular brewer’s rice in Akita prefecture, and it’s suitable for polishing more than 50%. It’s very good at being highly polished, so it’s good for brewing higher-grade Sake.
It has a good balance of sourness, moderate bitterness, and soft sweetness that envelops you.
