The first impression of top note is like a young banana which is fresh and sweet. The surface of texture is silky smooth and its inside is thick and dense like the starch syrup.
Firstly, rich umami influenced by the local brewery rice “Yumesansui 夢山水” shows up and the sweetness is well controlled.
As the temperature rises toward to the room temperature, the fresh-sourness like lactic acid is coming up and gradually shifting to creamy and milky taste; the change of the taste is very exciting. This is an elegant Junmai Daiginjo that has well-balanced 5 tastes.
